Tio Pepe Olives Recipe

Have you got guests over and you are missing some nibbles? We’ve all been there! Reach to your fridge and impress everyone with Chef Nick’s Tio Pepe olives. Super easy, super quick, here is how:

Ingredients

  • 1 jar of olives
  • Shallots
  • 2 cloves fresh garlic,
  • Sweet paprika
  • Fresh parsley
  • Salt
  • Black pepper
  • Worcestershire sauce
  • Tabasco
  • 1 lemon
  • 1 Chili
  • Tio Pepe sherry

Method

  1. Pour out half of the brine from the olive jar and remove less than a quarter of the olives to make space for the marinade.
  2. Add a finely diced shallot and the two cloves of garlic, also finely chopped directly into the jar.
  3. Add some sweet paprika, chopped parsley, salt, black pepper,
  4. Follow with a dash of Worcestershire sauce, a splash of Tabasco, some lemon zest, a small squeeze of lemon juice, and a few slices of your chili
  5. Pour in enough Tio Pepe to fully cover the olives.
  6. Add back the olives you removed earlier.
  7. Close the lid tightly and shake vigorously to combine everything.
  8. When ready to serve, taste and adjust seasoning to your liking.
  9. Refrigerate and allow the olives to marinate—the longer it sits, the better it tastes.
