Seasoned Sardines

You can’t say you like Spanish food if you haven’t tried their fish- these easy seasoned sardines, are delicious and include no actual cooking!

INGREDIENTS

Sardines
Shallots
Lemon
Capers
Sun-dried tomato
Fresh parsley
Olive oil
Salt
Black pepper

To serve:
Bread

METHOD

  1. Finely chop the shallots and place them in a bowl.
  2. Zest the lemon into the bowl. Then peel the lemon, removing all the rind, and segment it. Remove any seeds and slice the segments thinly. Add to the bowl.
  3. Add a small pinch of capers and chop them before adding.
  4. Pat down the sun-dried tomato to remove excess oil, then slice it into thin strips and chop. Add to the bowl.
  5. Chop fresh parsley and add to the mixture.
  6. Season with a little salt and black pepper, being careful with the salt as the capers and sardines are already salty. Add a drizzle of olive oil and mix everything together well.
  7. Arrange the sardines on a plate.
  8. Spoon the dressing over the sardines, spreading it evenly.
  9. Finish with a little sea salt and a drizzle of olive oil. Add a squeeze of lemon juice if desired.
  10. Serve with bread.
