Feta and olive tart

The perfect canape for a sophisticated evening – or at least it will become sophisticated once you make these, and the best thing; they are super easy and quick!

INGREDIENTS

Feta cheese
Olives (drained)
Lemon
Salt
Black pepper
Sweet paprika
Fresh chives
Fresh basil
Walnuts
Tart cases
Orange

METHOD

  1. Pour the drained olives into a blender along with the feta cheese. Add a squeeze of lemon, a tiny bit of salt and pepper, sweet paprika, fresh chives, and fresh basil.
  2. Blend everything together until smooth.
  3. Taste to check the seasoning, then add the walnuts and blend again.
  4. Spoon a dollop of the mixture into the tart cases. Add a piece of walnut on top for extra crunch.
  5. Top and tail the orange and carefully slice away all the rind. Following the natural lines of the orange, remove the segments, then cut them into small cubes.
  6. Place the orange cubes on top of the tarts and finish with fresh chives.
