Cherry Gazpacho

It is hard to find a more Spanish food than Gazpacho! This week, Chef Nick has brought us exactly that, but with a fruity, summer twist- learn how to make a very easy cherry Gazpacho.

INGREDIENTS

Cherries (pitted)
Tomatoes
Green pepper
Red pepper
Cucumber
Garlic
Salt
Black pepper
Vinegar
Water
Olive oil
Fresh chives

METHOD

  1. Wash the cherries, remove the stalks, cut them in half, remove the stones, and add them to a blender.
  2. Remove the core from the tomatoes, chop them into pieces, and add to the blender.
  3. Chop the green pepper into pieces and add to the blender. Add a little red pepper as well.
  4. Top and tail the cucumber, peel it, remove the seeds, chop it into pieces, and add to the blender.
  5. Add one clove of garlic and a little more tomato if needed.
  6. Season with salt and black pepper. Add a splash of vinegar and a little water to help everything blend.
  7. Blend for a couple of minutes until smooth.
  8. With the blender running, slowly drizzle in the olive oil until the gazpacho begins to thicken.
  9. Taste and adjust the seasoning with more salt and olive oil if required.
  10. If desired, pass the gazpacho through a sieve. Chill in the fridge before serving, or serve immediately.
  11. Finish with fresh chives and a few cherries in the centre.
