This week’s Simplified Spanish recipe combines the bitterness of the apple and the characteristic flavour of back pudding. Easy to try at home and will guarantee impressed guests.
INGREDIENTS
Green apple
Olive oil
Salt
Pepper
Garlic
Onion
Black pudding
Bread
Parsley
METHOD
- Peel the green apple, slice it into small dices, and place in a container with a little olive oil, salt, and pepper. Cover with cling film.
- Place in the microwave for about four minutes to steam the apples.
- Remove the apple and add it to a blender. Blend until smooth. Season to taste and add a splash of olive oil.
- Heat a pan with oil over medium heat. Smash a piece of garlic and slice a few small pieces of onion, then add them to the oil.
- Slice the black pudding and remove the outer layer.
- Add pieces of bread to the oil to make croutons.
- Keep an eye on the croutons and remove them from the pan once golden. Drain off excess oil.
- Add the black pudding to the oil and cook until it is fully cooked through.
- Remove the garlic and onion from the pan.
- Remove the black pudding once cooked and allow it to drain.
- To plate up, place a crouton on the plate and add a dollop of the apple purée on top.
- Place the black pudding and crispy onion on top. Add a small bit of purée on top of the black pudding and finish with salt and parsley.
