It is hard to find a more Spanish food than Gazpacho! This week, Chef Nick has brought us exactly that, but with a fruity, summer twist- learn how to make a very easy cherry Gazpacho.
INGREDIENTS
Cherries (pitted)
Tomatoes
Green pepper
Red pepper
Cucumber
Garlic
Salt
Black pepper
Vinegar
Water
Olive oil
Fresh chives
METHOD
- Wash the cherries, remove the stalks, cut them in half, remove the stones, and add them to a blender.
- Remove the core from the tomatoes, chop them into pieces, and add to the blender.
- Chop the green pepper into pieces and add to the blender. Add a little red pepper as well.
- Top and tail the cucumber, peel it, remove the seeds, chop it into pieces, and add to the blender.
- Add one clove of garlic and a little more tomato if needed.
- Season with salt and black pepper. Add a splash of vinegar and a little water to help everything blend.
- Blend for a couple of minutes until smooth.
- With the blender running, slowly drizzle in the olive oil until the gazpacho begins to thicken.
- Taste and adjust the seasoning with more salt and olive oil if required.
- If desired, pass the gazpacho through a sieve. Chill in the fridge before serving, or serve immediately.
- Finish with fresh chives and a few cherries in the centre.
