Secreto pork

This week’s simplified Spanish recipe is secreto! In my personal opinion, the most delicious meat to ever exist. Very popular in Spanish culture and hard to find in other countries- this meat will undoubtedly get your mouth watering.

INGREDIENTS

Secreto pork
Salt
Black pepper
Garlic cloves
Fresh parsley
Lemon

METHOD

  1. Remove the secreto from the fridge and identify the fattier side and the leaner side.
  2. Season both sides lightly with salt.
  3. Place a cold pan over medium heat. Add the secreto fat-side down, with no oil in the pan.
  4. Allow the fat to render slowly. Season the top side with black pepper.
  5. Add a couple of garlic cloves to the pan and move them around gently as they cook.
  6. Cook the secreto like a fillet steak — as it cooks, the sides will begin to rise.
  7. Once the meat starts to lift and colour, flip it over.
  8. Cook for a couple of minutes more, turning to seal all sides evenly.
  9. Remove the garlic once cooked and fragrant.
  10. Take the secreto off the heat and plate up.
  11. Finish with chopped parsley, a pinch of salt, and a squeeze of lemon.
