Chef Nick is back with another Simplified Spanish recipe! This week’s delicious dish is perfect as a starter, tapa or with a bit of salad if you are little peckish; the mix of sweet and salty will have your guests obsessed. Here is how to make a dates with goat’s cheese and serrano ham.
INGREDIENTS
Goat’s cheese
Walnuts
Fresh chives
Salt
Black pepper
Lemon
Dates
Serrano ham
Cherry tomatoes
Rocket
Balsamic vinegar
METHOD
- Cut around the outside of the goat’s cheese, using only the soft middle part.
- Slice the goat’s cheese and place it into a bowl.
- Cut the walnuts into small pieces and add them to the bowl.
- Add chives, a little salt, and black pepper.
- Squeeze in lemon juice and add a little lemon zest. Mix everything together well.
- Slice the dates and remove the stones.
- Take a scoop of the goat’s cheese mixture, press it into the dates, and wrap each one in Serrano ham.
- Repeat the process with the remaining dates.
- Preheat the oven to 180°C and cook the wrapped dates for about 10 minutes.
- To finish, serve with cherry tomatoes, chives, and rocket.
- Add a squeeze of balsamic vinegar and a couple of walnuts on top.
