This easy and quick recipe will absolutely revolutionize the way you eat your olives.
INGREDIENTS
Olives
Olive juice (from the olives)
Oil
4 cloves garlic
Shallots
Chilli
Salt
Peppers
Bay leaf
Fresh thyme
Sweet paprika
White wine
Lemon
Tomato
Fresh parsley
Fresh chives
To serve:
Bread
METHOD
- Drain the olives and keep some of the olive juice in a separate bowl.
- Heat a pan over medium to high heat with oil.
- Thinly slice the garlic cloves. Finely slice a couple of shallots.
- Add chilli to the pan with a little salt.
- Add the shallots and garlic to the oil.
- Add some cubed peppers and the bay leaf to the oil to pack flavour into it.
- Cook gently, making sure not to burn the contents of the oil. The aim is to infuse the oil. Remove the bay leaf after a short time.
- Add the olives to the pan and add some chopped thyme.
- Turn the heat up slightly. Add a teaspoon of sweet paprika and a splash of white wine.
- Add a small amount of the reserved olive juice.
- Add salt, lemon zest, a splash of lemon juice, and a spoonful of tomato to thicken.
- Finish with chopped parsley and chives.
- Serve with bread.
