You can’t say you like Spanish food if you haven’t tried their fish- these easy seasoned sardines, are delicious and include no actual cooking!
INGREDIENTS
Sardines
Shallots
Lemon
Capers
Sun-dried tomato
Fresh parsley
Olive oil
Salt
Black pepper
To serve:
Bread
METHOD
- Finely chop the shallots and place them in a bowl.
- Zest the lemon into the bowl. Then peel the lemon, removing all the rind, and segment it. Remove any seeds and slice the segments thinly. Add to the bowl.
- Add a small pinch of capers and chop them before adding.
- Pat down the sun-dried tomato to remove excess oil, then slice it into thin strips and chop. Add to the bowl.
- Chop fresh parsley and add to the mixture.
- Season with a little salt and black pepper, being careful with the salt as the capers and sardines are already salty. Add a drizzle of olive oil and mix everything together well.
- Arrange the sardines on a plate.
- Spoon the dressing over the sardines, spreading it evenly.
- Finish with a little sea salt and a drizzle of olive oil. Add a squeeze of lemon juice if desired.
- Serve with bread.
